Oven-baked spicy corn, with gorgonzola – Vegetarian

This flavorful dish brings a twist to traditional corn by baking it in the oven instead of boiling or sautéing.

Infused with the bold, creamy taste of Gorgonzola and a kick of chili flakes (optional for those who prefer a milder flavour), it’s a delicious combination of heat and richness. These baked corn bites are incredibly easy to make and beautifully golden when done.

Serve them as an appetizer, side dish, or a satisfying individual snack. Tasty, simple, and sure to impress.

Ingredients: (for 4 servings)

  • 4 cobs of corn (as fresh as possible)
  • Gorgonzola cheese (I used the spicy variety)
  • Salt (I used coarse salt with wildflowers, but any type of salt will work)
  • Chili flakes
  • Butter (about 80 grams)
  • A few sprigs of fresh parsley

Preparation:

Remove the corn silk, but carefully peel back the husks without detaching them completely. At the base of each cob, braid the husks into three strands. Keeping the husks attached helps retain moisture during baking, preventing the corn from drying out, and it also adds a nice visual touch.

While you prepare the corn, preheat the oven to 180°C (350°F).

If you’d prefer not to braid the husks (even though it’s quite simple), you can remove them completely and use them as a base in the baking tray.

Prepare a baking tray. Generously coat the corn with butter on all sides. Place the corn in the tray, then sprinkle each cob with salt to taste. Just keep in mind that the cheese added later is also salty, so it’s better to season lightly at this stage. Add chili flakes on top as desired.

Once the oven is preheated, place the corn inside and bake for about 35–40 minutes.

Meanwhile, finely chop the parsley and cut the Gorgonzola into small cubes or pieces.

When the corn is done, remove it from the oven and sprinkle generously with the cheese and fresh parsley.
