Savory bacon muffins

These bacon appetizer muffins are the perfect bite-sized blend of savory flavor and soft, fluffy texture. Packed with crispy bacon bits and melty cheese, each muffin delivers a satisfying, smoky richness in every bite. Whether served warm straight from the oven or cooled for a party platter, they make a crowd-pleasing snack, brunch addition, or appetizer for any occasion. Easy to make and even easier to enjoy, these muffins are a guaranteed hit: perfect for holidays, game days, or whenever you’re craving something deliciously savory.

Ingredients:

  • 500 g diced bacon
  • 1 bunch of green onions
  • 250 g shredded mozzarella
  • 5 eggs
  • 1 large cup of flour
  • Salt and pepper
  • 1 cup of milk
  • 400 g Greek yogurt
  • 2 packets of baking powder

Preparation:
In a large wok or deep skillet, cook the bacon with a bit of butter for a few minutes until it turns golden and crispy.

In a separate bowl, whisk the eggs with salt and pepper. Add the finely chopped, washed green onions, milk, shredded mozzarella, flour, Greek yogurt, and baking powder. Mix until everything is well combined.

Once the bacon is ready, let it cool slightly, then fold it into the mixture.

Using a large spoon, portion the batter into muffin molds. Bake in a preheated oven at 160–170°C (320–340°F) for about 30 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.

Tip: I recommend using silicone muffin molds if you have them. Since the batter contains cheese, I found that when using paper liners, the muffins tended to stick to the paper quite a bit.
