Strudel with sour cherries and almonds

If you’re looking for a dessert that’s as cozy as it is delicious, this sour cherry and almond strudel is it. Picture buttery, flaky pastry filled with tangy cherries and crunchy almonds – it’s the perfect balance of sweet and sour. Plus, the smell of this baking in your kitchen? Absolute heaven. Whether you’re treating yourself after a long day or serving it up for friends, this strudel is guaranteed to disappear fast. Trust me, you’ll want to make this one again and again!

Ingredients: (for 4 rolls)

  • 2 packages of phyllo dough
  • 200-220 g melted butter
  • 1.2 kg pitted sour cherries (I had frozen – you can also use other frozen sour fruits, like berries, apricots, cherries, etc.)
  • 240 g sugar
  • 200 g raw almonds
  • 120 g breadcrumbs

For serving (optional):

  • vanilla powdered sugar
  • vanilla ice cream (or your favorite flavor)

Preparation:

Preheat the oven and line a baking tray with parchment paper.
Melt the butter (cut into cubes) in the microwave for about one minute, or until it’s fully softened.

Unroll the phyllo dough and divide each package into two (count the sheets and split them evenly for each strudel).

On a flat surface, use a pastry brush to lightly coat each sheet with the melted butter. Add the next sheet on top and repeat the process until all sheets for one strudel are greased. (For each strudel, I used 6 sheets, with 12 sheets in total per package.)

Divide all the ingredients into 4 equal portions, so that for each strudel you will use: 50g butter for greasing, 300g sour cherries, 60g sugar, 50g almonds, and 30g breadcrumbs.

Once the first layer of phyllo sheets is greased with butter (leaving a small margin at the edge), sprinkle the breadcrumbs evenly. Next, place the well-drained cherries on top, followed by the almonds and sugar.

Gently fold the edges as shown in the image below, then roll up the sheets with the filling, making sure to create a tightly sealed roll.

Continue this process until all the sheets and remaining ingredients are used, resulting in four rolls. Preheat the oven to 180°C. Brush each roll with a bit of butter, prick them gently with a fork in a few spots, and sprinkle a little sugar on top.

Place the rolls on the middle rack of the oven and bake for about 40 minutes. Keep an eye on them to make sure they don’t burn, and let them turn a lovely golden brown.

Allow the strudels to cool completely before slicing and serving. Sprinkle with a generous amount of powdered sugar and pair with your favorite ice cream. Enjoy – it’s pure deliciousness!
