Ingredients: (serves 4)
- 200 g quinoa
- 50 g butter
- 300-400 g mushrooms
- 1 bell pepper
- 2 medium red onions
- 500 g broccoli
For the garlic sauce:
- 250 ml plain yogurt
- a few cloves of garlic
- grated lemon zest
- pepper
- fresh parsley
For serving:
- 120 g raw almonds
- avocado
For the vegan version, use olive oil instead of butter and vegan yogurt for the garlic yogurt sauce.

Preparation:
Wash the broccoli and cut the stalk into medium-sized florets. Boil in water with a little salt. Boil until done, then drain well and set aside.
Coarsely chop the almonds with a knife, place them in a non-stick pan and brown.

Rinse the quinoa, put it in a pot with water and a little salt, and boil until it is ready. Drain and set aside.
Put the yogurt in a bowl with the garlic, pepper, finely chopped parsley, and lemon zest. Mix everything well and set aside.

Slice the onion, cut the pepper into thin strips, and slice the mushrooms. In a large wok, melt the butter. Once hot, add the onion and sauté briefly until it begins to soften. Add the pepper and cook for about a minute. Then, add the mushrooms and continue to sauté until most of their liquid has evaporated.
Next, add the cooked broccoli and quinoa, stir well to combine, and let everything heat through for about a minute. Then remove from the heat.

Serve with yogurt sauce on top, avocado slices sprinkled with pepper and salt, and pieces of browned almonds.
