Aromatic Pangasius and asparagus with mango salad

This dish is a delightful surprise – fresh, flavorful, and a little bit special. The tender pangasius pairs perfectly with crisp asparagus, and the sweet, juicy mango adds just the right pop of brightness. Plus, it’s super quick and easy to whip up, making it ideal for a light lunch or a satisfying dinner.

If you’re looking for something that’s both tasty and a bit unexpected, this combo is calling your name.

Ingredients: (for 2 servings)

  • 4 pangasius fillets – marinate for 3-4 hours before cooking in: 5-6 tablespoons of yogurt, 4 tablespoons of olive oil, a teaspoon of dried parsley, juice of half a lemon, a teaspoon of turmeric, a tablespoon of garlic powder, salt and pepper. Mix everything well and leave the fish to marinate, covered, for at least 3 hours. – You can use fillets of any other fish you like and marinate it in the same way.
  • 50 g butter
  • 15 cherry tomatoes
  • 8-10 radishes
  • half a mango
  • a few sprigs of fresh parsley
  • a few sprigs of green scallions
  • a lemon + for serving
  • 500 g asparagus
  • 50 g grated parmesan
  • salt + pepper
  • olive oil

Preparation:

In a large wok, melt the butter. Add the cleaned asparagus (with the tough ends removed) and toss to coat. Season with salt and pepper, then cover with a lid and cook, stirring occasionally, until the asparagus is nicely browned and tender (about 15 minutes). Once cooked, transfer to a plate and sprinkle with grated Parmesan.

Heat a bit of olive oil in a pan, and once hot, cook the fish, browning it nicely on both sides. Then, transfer it to a plate.

While the fish is cooking, prepare the salad. Wash and chop the vegetables: thinly slice the radishes, quarter the tomatoes, dice the mango, and finely chop the greens. Cut the lemon in half—slice one half very thinly. Combine all the ingredients in a bowl, squeeze the juice from the other lemon half over them, season with salt and pepper, and toss everything together thoroughly.

Place the salad over the asparagus.
