Baked trout with a side dish of beans and garlic

Looking for an easy yet impressive meal? Baked trout with beans and garlic is the answer!

Perfectly baked trout paired with garlicky beans: simple, delicious, and packed with flavour.

It’s fancy enough for a dinner party but easy enough for a weeknight. Plus, it’s healthy and super tasty.

Ingredients: (for 2 servings)

  • 2 trouts
  • ~700 g green beans
  • 1 clove garlic
  • salt + pepper
  • olive oil
  • 1 tablespoon sweet paprika
  • 1 tablespoon garlic powder
  • a few sprigs of fresh thyme
  • 1 teaspoon turmeric

Preparation:

Rinse the trout and remove the scales. Using a sharp knife, cut along the spine line on both sides to easily remove it (be careful not to cut through the skin). Then, carefully remove the bones using your fingers or tweezers.

Once done, rinse the fish, drain it well, and rub it with oil on both sides. Sprinkle with paprika, garlic powder, salt, pepper, and a bit of chopped thyme. Place the fish on a baking tray, then preheat the oven to 220°C (grill function or top heat). Once the oven is hot, bake the fish for about 15-18 minutes.

Rinse the green beans, trim the ends, and place them in a pot of water. Bring the water to a boil and cook the beans for about 10-15 minutes, or until they are just slightly softened. Once they are done, drain the water. In a large wok, heat a bit of olive oil, then add the partially cooked beans and sauté for 1-2 minutes. Season with salt, pepper, and turmeric, then stir well and cook for another 10-12 minutes. Meanwhile, peel and crush the garlic. Just before turning off the heat, add the crushed garlic, mix well, and cook for another minute before removing from heat.

Serve it alongside oven-roasted trout. It’s both delicious and simple to prepare!
