A recipe that can be made in the blink of an eye, and which is even better the second day (if there’s any left) 😀 Here’s some important information about the benefits of tofu:
- Good source of protein: Tofu is an excellent source of plant-based protein, being a healthy alternative to animal protein.
- Rich in minerals: Tofu contains essential minerals such as calcium, iron, magnesium, and zinc, important for bone health, blood health, and the immune system.
- Low in saturated fat: Unlike many animal products, tofu is low in saturated fat, making it a heart-healthy option.
- Contains isoflavones: Isoflavones are plant compounds with antioxidant and anti-inflammatory properties, which can help reduce the risk of certain types of cancer.
- Versatile in the kitchen: Tofu is a versatile ingredient that can be used in numerous recipes, from salads and stir-fries to vegetarian burgers and desserts.
So if you are short on ideas or time, or if you are fasting, or maybe you want to change things up a bit in the kitchen, this recipe is worth a try. I promise you will like it. You can consider it a main course or prepare it as a side dish for something else.
Ingredients: (for 4 servings)
- 500 g tofu (drained well)
- 400 g green beans
- 3-4 medium carrots
- 2 tablespoons starch
- a few green onion stalks
- 4 tablespoons honey
- 100 ml soy sauce
- 100 ml water
- 4 tablespoons white sesame
- 60 ml oil

Preparation:
Drain the tofu well and cut it into large cubes, as equal as possible (about 4 cm on each side).
Wash the beans, cut off the ends and then cut them in half if they are long.
Peel the carrots and cut them into strips.
Finely chop the spring onion.

In a large frying pan, add half the oil, and when it is hot, add the tofu cubes, sprinkle with a little salt and brown them on all sides until they are a nice golden colour. When they are done, remove them to a plate and set aside.

In the same pan, add the remaining oil and the beans and carrots and cook over high heat, stirring frequently, for about 10 minutes or until they start to brown and soften a bit. Be careful not to overcook them.
While the vegetables are cooking, in a bowl add the soy sauce, water, honey and cornstarch and mix everything well with a fork.
When the vegetables are cooked, add the tofu pieces back and mix well.

Then, add the sauce you prepared earlier, mix everything quickly and cook for about a minute. Turn off the heat and add the chopped green onions, and before serving, add the sesame seeds.

Serve it as is or as a side dish to any dish you want, and it goes well with it.
