Banana&chocolate muffins

Let’s be honest: banana bread is great, but sometimes you just want something smaller, cuter, and ready in 20 minutes. Enter: these Banana & Chocolate Muffins. They’re soft, fluffy, and packed with melty chocolate chunks and just enough banana to convince yourself it’s kind of healthy.

Perfect for using up those sad, spotty bananas sitting on your counter, and even more perfect as a snack, breakfast-on-the-go, or late-night treat. No fancy equipment, no weird ingredients, just classic muffin goodness with a chocolatey twist.

Ingredients: (for 18 pieces)

  • 100 g butter (melted for 1 – 1.5 minutes in the microwave)
  • 3 large ripe bananas
  • 150 g brown sugar
  • 300 g flour
  • 1 tablespoon vanilla essence
  • 3 eggs
  • 2 sachets baking powder
  • 4-5 squares of chocolate chips (optional)

Preparation:

In a large bowl, place the peeled bananas and mash them with a fork.

Next, add the eggs, melted butter, vanilla extract, sugar, and baking powder. Mix everything well using a hand mixer. Gradually add the flour and continue mixing until the batter is smooth and well combined.

Preheat the oven to 180°C and let it heat up. Spoon the batter into a muffin tray, filling each cup about two-thirds full. If you’d like, sprinkle some chopped chocolate on top for an extra treat. Or keep them plain: they’ll still be absolutely delicious!

Place the tray in the oven for 20-25 minutes or until the muffins are browned and pass the toothpick test.
