
These beef burritos are the ultimate crowd-pleaser: delicious, easy to throw together, and perfect for sharing with friends (or keeping all to yourself, we don’t judge). They’re partially baked for that warm, melty finish, and the best part? You can tweak the recipe however you like.
Not into beef? Swap it for chicken or pork. Going meat-free? Just load up on veggies and skip the meat altogether; it’s still just as tasty.
Wrap it, bake it, devour it. Burrito night just got an upgrade!
Ingredients: (for 5 servings)
- 500 g minced beef
- 100 g grated cheese (I had Gouda – you can use cheese, cheddar, etc.)
- 2 bell peppers (one green and one red)
- 1 jalapeno pepper
- 2 cloves of garlic
- 1 lime
- 3 tomatoes
- 2 onions
- 5 tortilla wraps
- 150 g canned beans
- 50 g canned corn
- spice mix of: one tablespoon of paprika, half a teaspoon of pepper, one teaspoon of garlic powder, half a teaspoon of fennel seeds, and one teaspoon of dried thyme
- a little oil
- a few sprigs of fresh coriander

Preparation:
Dice the bell peppers after washing them, peel and slice the onion, and clean the jalapeño—cut it in half, remove the seeds, and chop it finely. Rinse the beans and corn, dice the tomatoes, peel and crush the garlic, and grate the cheese.

Heat a bit of oil in a large wok or deep pan. Once hot, add the beef and cook for about 5 minutes, or until it’s no longer pink. Add the sliced onion, diced bell peppers, crushed garlic, and chopped jalapeño, and cook everything together for another 5 minutes. Next, stir in the tomatoes, lime juice, spices, corn, and beans. Cook for another 5 minutes, stirring occasionally. Season with salt to taste, then turn off the heat.

Preheat the oven to 200°C. Once the filling is ready, divide it into 5 equal portions and place the filling in the center of each wrap. Fold them up and arrange them in the baking tray, one by one.

Once all the wraps are filled, sprinkle the grated cheese on top and bake in the oven for 10-15 minutes, or until the cheese is golden and bubbly.

Once they’re done, take the tray out of the oven and sprinkle with chopped coriander.
Serve them hot for a delicious treat!
