Ingredients: (for 4 servings)
*The soup can also be made with green asparagus
- 500 g white asparagus
- 200 ml cooking cream
- a few sprigs of fresh parsley
- 2 medium onions
- a potato
- 2 cubes of soup base (vegetable flavor)
- a tablespoon of curry
- salt + pepper
- a little oil

Preparation:
Rinse the asparagus thoroughly, trim off the tough ends, and peel the stalks. Don’t throw away the trimmings—set them aside in a bowl. Next, cut the peeled asparagus into evenly sized pieces.

Peel and slice the onion. Peel and dice the potato.

In a large pot, heat the oil and add the chopped onion along with the curry powder. Sauté for 1–2 minutes until fragrant. Add the reserved asparagus trimmings and cook them briefly with the onion. Pour in about 2.5 liters of water, add the soup cubes, and let everything simmer over medium heat for 25–30 minutes.

After the time is up, take the pot off the heat. Strain the liquid into a bowl, then pour it back into the pot. Add the chopped asparagus and diced potato, and simmer for another 15–20 minutes.

Take the pot off the heat. Use a spatula to remove about half of the asparagus pieces from the soup and transfer them to a separate bowl. Set them aside. Add the cream to the remaining soup in the pot and blend it well using an immersion blender or stand mixer.

Return the reserved asparagus pieces to the pot, then season with salt and pepper to taste. Give everything a good stir. Wash and finely chop the parsley, then add it to the soup as well.
