
Discover the delightful simplicity of this Boiled Egg Salad with Mustard – a vegetarian treat!
Creamy eggs meet the tangy zest of mustard, creating a harmonious blend of flavors. Perfect for a light lunch or a refreshing side dish, this salad is a quick and easy way to add a touch of joy to your meal.
Ingredients: (for about 4-5 servings)
- 7 eggs
- 2-3 green onions
- 7 tablespoons yogurt
- 7 tablespoons cottage cheese
- mustard to taste (I recommend using classic mustard)
- pepper
- smoked paprika and/or turmeric powder (optional)

Preparation:
Boil the eggs until hard. While the eggs are boiling, slice the onion. In a bowl, combine the yogurt, chopped onion, cheese, mustard, and pepper. Once the eggs are cooked, peel and cut them into suitable cubes. Add the cubed eggs to the bowl with the other ingredients. Gently mix everything together using bottom-up movements.

Optionally, you can serve sprinkled with smoked paprika or turmeric. Eat on toast, warm bread, crackers, wasa, pickles, etc.
Serve cold, from the refrigerator.
