
This rich and savory dish combines tender pasta with sautéed mushrooms and crispy bacon, creating a perfect balance of flavors. Quick to prepare and satisfying, it’s the ideal comfort food for any occasion!
Ingredients: (for 4 servings)
- 300 g mushrooms
- 300 g raw bacon
- 400 g pasta sauce, tomato version
- 250 g pasta (I had fresh pappardelle)
- 400 g canned diced tomatoes
- 4-5 cloves of garlic
- 1 medium red onion
- 1 sprig of fresh rosemary
- 1 sprig of fresh thyme
- fresh basil
- 50 g butter
- 100 g grated cheese (I had Gouda)
- 2 tablespoons sugar
- salt and pepper

Preparation:
Cook the pasta according to the package instructions, then drain and set aside.
Clean the mushrooms and slice them. Finely chop the onion and slice the garlic. Grate the cheese.
In a dry pan, cook the bacon until crispy. Use a slotted spoon to transfer it to a bowl and set aside to drain.
In a large pan, melt the butter. Once melted, add the onion, garlic, rosemary, and thyme, and sauté until the onion begins to soften. Then, add the canned tomatoes and cook for about 2 minutes.

Next, add the chopped mushrooms, stir, and cook for about 2 minutes over medium heat, covering the pan. Then, pour in the pasta sauce, stir again, and let it cook with the lid on for another 10 minutes, or until the mushrooms are tender. Add the sugar, cook for another minute, then add the cooked and drained pasta. Stir everything together and remove the pan from the heat. Finally, stir in 2/3 of the grated cheese, mixing gently.

Transfer the pasta mixture to a serving bowl and top with the remaining cheese, crispy bacon, and fresh basil leaves. Sprinkle with pepper and add salt only if needed, as both the bacon and cheese may already provide enough salt. Be sure to taste before adding any extra salt.
