Chickpeas with curry – Vegan

This is one of the most flavorful chickpea curries you’ll ever taste: rich, vibrant, and deeply aromatic. With just a few simple ingredients and a bit of patience, you’ll have a colorful and comforting dish that’s both nourishing and satisfying.

Perfect for those following a vegan diet or observing a fasting period, this curry is a delicious way to enjoy plant-based goodness in every spoonful.

Ingredients:

  • Half a coffee cup of olive oil
  • 1 large cup of coconut milk (~300 ml)
  • 2 medium/large onions
  • 3 tablespoons tomato paste
  • 4 medium cans of chickpeas (~750 grams)
  • 1 hot chili pepper
  • A piece of fresh ginger
  • 1 small/medium head of garlic
  • Fresh coriander (cilantro)
  • 5–6 medium tomatoes
  • Spice mix:
    • 1 teaspoon coriander seeds
    • 1 tablespoon curry masala
    • 1 tablespoon garam masala
    • 1 tablespoon cumin

Preparation:

Wash the tomatoes and dice them finely. Peel the garlic and slice it thinly. Peel the ginger and cut it into small strips. Rinse the chili pepper, remove the seeds, and chop it into small pieces. Peel the onions and slice them.

In a large wok or deep pan, heat the oil. Once hot, add the spices, ginger, and garlic, and sauté them for about 30 seconds to release their aroma. Next, add the sliced onion and chopped chili pepper, stirring well. Cook for 1–2 minutes, then add the diced tomatoes and let everything simmer for another 3–4 minutes.

Once the tomato juices have reduced slightly, add the well-drained chickpeas. Stir in the tomato paste and mix thoroughly to combine. Bring the mixture to a gentle boil, then pour in the coconut milk. Stir well and let it simmer for about 5 minutes, stirring occasionally. Finally, add the finely chopped fresh coriander, give it one last mix, and turn off the heat. Season with salt to taste.

Let it rest for a few minutes before serving. You can enjoy it on its own, or pair it with grilled meat, plain rice, or sausages—whatever suits your taste.
