Onion and mushroom tart – Vegetarian

This savory tart is perfect for a cozy dinner, a casual lunch, or sharing with friends. The rich filling of mushrooms and onions caramelized in butter is encased in a crispy, flavorful sesame crust that takes this dish to the next level. Easy to prepare and full of comforting flavors, it’s definitely a recipe worth trying.

Ingredients: (for a 28 cm diameter tart pan)

  • 110 g flour
  • 100 g white sesame seeds
  • Half a packet of baking powder
  • 4 eggs
  • 100 g melted butter + 70 g butter at room temperature
  • ~800-900 g onions
  • 500 g fresh mushrooms (I used oyster mushrooms)
  • 400 ml sour cream
  • Fresh parsley
  • Salt, pepper, dried oregano
  • Dried basil
  • 1 tomato for garnish (optional)

Preparation:

Preheat the oven to 170°C (340°F). In a food processor, combine the flour, sesame seeds, one egg, a pinch of salt, the melted butter (100 g), and half a packet of baking powder. Blend until the mixture is well combined.

Transfer the prepared dough into the pan you’ll be using, and press it evenly across the bottom and up the sides with your hands. Bake it in the oven for about 5–7 minutes, then remove it. Turn off the oven for now, as it won’t be needed again immediately.

Rinse the mushrooms thoroughly and chop them finely. Peel the onion, cut it in half, then slice it evenly.

In a large wok or pot, melt the remaining 70 grams of butter. Once melted, add the onion and sauté for a few minutes until it becomes soft, translucent, and well-cooked. Next, add the mushrooms, stir well, and continue sautéing until the mushrooms release their moisture, and it evaporates. Season with salt, pepper, and oregano.

Transfer the mixture to a bowl and let it cool slightly. Meanwhile, preheat the oven again to 170°C (340°F). Once cooled, stir in the sour cream until well combined. Wash and finely chop the parsley, then add it to the mixture. Finally, add the remaining eggs and mix thoroughly.

After thoroughly mixing all the filling ingredients, pour the mixture over the partially baked crust in the pan. Slice the tomato and arrange the slices on top of the tart. Finish by sprinkling dried basil evenly over the surface.

Cook the tart in the oven for 60 minutes.

Allow it to cool slightly, then slice into portions and enjoy every bite.
