This simple yet flavorful twist on classic boiled corn brings out its natural sweetness while infusing it with rich, aromatic notes. Gently simmered in milk with fresh thyme and garlic, the corn becomes tender, creamy, and irresistibly fragrant. It’s an easy and quick recipe that elevates a summer staple into something truly special. All you need are a few basic ingredients and a few minutes to enjoy this delicious, comforting dish.
Ingredients (for 5 servings):
- 5 young corn cobs (the kernels should be soft and should pop relatively easily when pressed with a fingernail – avoid mature corn, as it will turn out tough when boiled)
- 100 g butter
- 5–6 garlic cloves
- A few sprigs of fresh thyme
- One large cup of milk (~350 ml)
- One heaping tablespoon of salt

Remove the husks and silk from the corn, rinse well, and cut each cob in half. Peel the garlic cloves and crush them. Rinse the thyme and chop it finely.

In a large pot, bring about 2–2.5 liters of water to a boil with the salt. Once boiling, add the butter and milk, then stir in the corn, crushed garlic, and chopped thyme.

Simmer over medium heat for about ~30 minutes. Once the corn is tender, turn off the heat, transfer the cobs to a plate, and lightly sprinkle with salt before serving.
