

For breakfast or brunch, lunch or dinner, this recipe will provide you with a complete and nutritious meal, no matter what time of day you decide to prepare and eat it. What I think rounds out the taste perfectly are the fresh mint leaves added at the end. Absolutely delicious.
Ingredients: (for 3 servings)
- 2 large leeks
- a bunch of dill
- 7-8 cloves of garlic
- 6 eggs
- 2 medium onions
- 300 g fresh spinach
- 150 g frozen peas
- a few sprigs of fresh mint
- a teaspoon of coriander seeds
- a teaspoon of cumin seeds
- salt + pepper
- 20 ml olive oil

Preparation:
Wash the spinach, drain well and set aside. Wash the dill and chop finely. Peel the onion and chop it finely. Cut the leek in half lengthwise and then into equal slices. Peel the garlic and cut it into slices.

In a large frying pan, add the oil and onion and sauté for ~2 minutes over medium heat. Then add the leek, mix well and cook with the lid on for another ~2 minutes.

Then, using a wooden spoon, make a little space (holes) in 6 places and place an egg in each hole. Sprinkle salt and pepper on top.
Cover again with the lid and cook for another 5 minutes on medium heat.

Finally, after turning off the heat, sprinkle the chopped dill and fresh mint leaves on top. Serve hot.
