Fluffy pancakes with ricotta cheese and forest fruits

Fluffy pancakes, not too sweet, which can be eaten plain or with your favorite jam.

Easy to prepare from a few ingredients. They are perfect for lazy weekend afternoons. 💜

Ingredients: (for ~9-10 pieces)

  • 200 g flour
  • 9 spoons of sugar
  • 15 g baking powder
  • 3 large eggs
  • 100 ml milk
  • 60 ml lemon juice
  • grated peel from a lemon
  • 250 g ricotta cheese
  • vanilla essence
  • a spoonful of classic vinegar
  • A pinch of salt
  • ~200 g mixed berries or your favorite fruits
  • Maple syrup for serving
  • Extra fruits for serving
  • a little sunflower oil for greasing the pan

Preparation:

Separate the yolks from the whites.

In a bowl, mix the flour + sugar + baking powder. In another bowl, mix the ricotta cheese + egg yolks + lemon juice + vanilla essence + a spoonful of vinegar. Mix well using a whisk.

In another bowl, using a hand mixer, mix well the egg whites with a little salt until we get a consistent foam.

Combine the flour mixture with the ricotta mixture and mix well with a spatula. Then add the mixed egg whites and incorporate well with the help of the spatula. Add the well-drained fruits and mix gently until they are incorporated. Be careful not to crush them.

Prepare a pastry brush and a little sunflower oil in a bowl.

Heat the pan at low heat. Grease the pan with a little oil using the brush. When the pan is hot, pour some dough with the help of a ladle. Let it brown and be careful not to burn it. Turn to the other side with the help of a frying spatula. Proceed like this until you finish the dough.

Serve with maple syrup, fresh fruits, your favourite jam, whipped cream, or plain.
