
A simple yet flavorful breakfast that brings together the richness of eggs and the natural sweetness of vegetables caramelized in butter. This dish is not only delicious but also wholesome and satisfying, making it a perfect choice for a quick morning meal or a lazy weekend brunch. Easy to prepare, nourishing, and full of color. It’s comfort food that feels indulgent while still being healthy.
Ingredients: (for 2 servings)
- 4 eggs
- Half a bell pepper
- 2 medium tomatoes
- 1 medium onion
- 50 g fresh spinach
- Salt + pepper
- A little fresh basil
- ~50 g butter
- 1 avocado (for serving – optional)

Preparation:
Rinse the spinach thoroughly. Wash the bell pepper and slice it into strips. Clean the tomatoes and chop them into cubes. Peel the onion, cut it in half, then slice each half. Crack the eggs into a bowl to make it easier to pour and evenly distribute them in the pan when ready.

In a non-stick pan, melt the butter. Once melted, add the onion and sauté for about a minute until it begins to soften. Next, add the tomatoes, stir, and cook for another minute before adding the peppers. Continue cooking for an additional minute, stirring constantly.

Once the peppers have softened slightly, add the spinach and cook for about 30 seconds. Then, stir in the chopped basil and evenly distribute the eggs over the mixture. Season with salt and pepper, cover with a lid, and cook until the egg whites are set. At that point, turn off the heat.

Serve two eggs per portion, accompanied by half an avocado.
