Avocado and egg toast – Vegetarian

A simple and delicious breakfast idea that’s ready in minutes! Creamy avocado paired with perfectly cooked eggs on crispy toast creates a satisfying and nutritious start to your day. Whether you’re in a rush or just craving something tasty and wholesome, these toasts are a perfect choice.

Ingredients: (for two servings, two toasts each)

  • cow’s cheese (or goat cheese, if you prefer)
  • 4 eggs
  • 4 pieces of Wasa crispbread (or your favorite bread, lightly toasted)
  • 2 avocados
  • 6 tablespoons coconut oil (or sunflower oil, if you prefer or have it on hand)
  • salt + pepper

Preparation:


Slice the cheese thinly and place the slices on top of the Wasa crispbread. Cut the avocados in half, remove the pit, and slice them. Place half of a sliced avocado on each piece of crispbread, layering it over the cheese.

Heat the coconut oil in a non-stick pan. Once hot, crack the eggs and fry them to your liking. Season with salt and pepper. When they’re ready, place one egg on top of each toast, over the avocado layer. We served them with fresh tomatoes, but they’re just as delicious on their own.

It’s a truly delicious combo, and I encourage you to give it a try, especially since it comes together so quickly.
