Gnocchi alla Sorrentina – Vegetarian

This classic Italian comfort dish is as simple as it is satisfying. Soft, pillowy gnocchi are baked in a rich tomato sauce with melted mozzarella and a touch of fresh basil – pure deliciousness in every bite. It’s easy to make, full of flavor, and perfect for a cozy lunch or dinner. So why wait? Grab your ingredients and get cooking, you’re going to love it!

Ingredients (For 4 servings):

  • 500 g fresh gnocchi
  • 1 tablespoon tomato paste
  • 5 garlic cloves
  • 5–6 tablespoons olive oil
  • 800 g tomato sauce (passata)
  • 200 g Grana Padano or Parmesan cheese
  • 300 g mozzarella
  • Salt & pepper
  • Fresh basil

Preparation:
Cook the gnocchi according to the package instructions. Once done, drain and set them aside.

In a large wok or deep pan, heat the olive oil and add the 5 peeled and crushed garlic cloves. Sauté briefly until fragrant, allowing the garlic to infuse the oil. Add the tomato sauce and the tablespoon of tomato paste, stir well, and let it simmer over low heat for about 10–15 minutes until slightly reduced.

Next, add some of the fresh basil—washed and roughly chopped—reserving a few whole leaves for garnish later. Stir to combine, season with salt and pepper, then remove from heat.

Add the drained gnocchi to the sauce and gently stir to coat them evenly. Then transfer the mixture to a baking dish.

Preheat the oven to 220°C (428°F). While it’s heating, finely grate the Grana Padano or Parmesan and cut the mozzarella into cubes. Sprinkle the grated cheese evenly over the gnocchi in the baking dish, then scatter the mozzarella cubes on top.

Put the baking dish into the preheated oven and bake for approximately 15–20 minutes.

Let it cool a bit and then place it on a plate. Garnish with a few basil leaves.
