Oven-baked cauliflower with cheese & bacon

If you thought cauliflower was just a boring side dish, think again!

This Cauliflower with Cheese and Bacon is here to change the game. Imagine tender cauliflower wrapped in gooey cheese, with crispy bacon bits scattered throughout, all baked to golden perfection. It’s comfort food that makes you feel like you’re doing something “healthy” (because, you know, cauliflower).

Whether you’re looking for a satisfying side dish, a low-carb snack, or just a reason to eat more bacon (we all have those moments), this dish has got your back. It’s ridiculously easy to make, and it’ll disappear just as fast as you can say “cheese and bacon.”

So, get ready for a cheesy, crispy, bacon-filled bite of heaven. You’ll wonder why you ever thought cauliflower was boring!

Ingredients:

  • 1 cauliflower (800-900 g)
  • 550 ml tomato juice
  • 1 large bunch of fresh dill
  • 3 medium onions
  • 1 bunch of green onions
  • 1 tablespoon smoked paprika
  • 250 g bacon cubes
  • 400 g mozzarella
  • 150 g spicy gorgonzola
  • Salt and pepper to taste
  • 40 g butter

Preparation:

Remove the leaves from the cauliflower, cut the florets at the base, wash them, and then chop them into smaller pieces using a large kitchen chopper. Transfer the chopped cauliflower to a bowl and set it aside.

Peel the onion and slice it. Also, wash and chop the green onions.

In a large frying pan, melt the butter. Once melted, add the onion and sauté for 2-3 minutes. Next, add the green onion and cook for another minute before adding the bacon. Sauté everything for another 2-3 minutes.

Next, add the paprika and stir well. Cook for 30-40 seconds, then add the washed and finely chopped dill along with the tomato juice. Mix everything together and let it simmer for about 4 minutes.

Preheat the oven to 180°C and let it warm up. While the mixture is cooking, grate the mozzarella and prepare a large ovenproof dish. Once the mixture is ready, remove it from the heat and let it cool for about 5 minutes. In the prepared dish, combine the chopped cauliflower, 3/4 of the grated mozzarella, crumbled gorgonzola, salt, and pepper. Mix everything together until well combined.

Press it down with your fingers, sprinkle the remaining grated mozzarella, and add a few pieces of gorgonzola. Then, bake in the preheated oven for 30-35 minutes.

Serve it hot – it’s absolutely delicious! For a vegetarian option, simply skip the bacon.
