Green vegetables tart – Vegetarian

Craving something delicious without the hassle? This Green Vegetable Tart is your answer! Packed with leek, peas, and broccoli, all coated in creamy sour cream and melted mozzarella, cheddar, and white cheese. The best part? It’s super easy to make with just puff pastry or pizza dough as the base.

Perfect for lunch, dinner, or brunch. And it’s vegetarian too! So go ahead, treat yourself to a slice (or two) of this easy, cheesy goodness.

Ingredients (for a 28 cm baking dish):

  • 1 puff pastry or pizza dough
  • 40 g butter
  • 2 leeks
  • 300 ml sour cream
  • 100 g mozzarella
  • 100 g white cheese
  • 100 g cheddar cheese
  • 5 small eggs or 4 large eggs
  • 400 g peas
  • 2 small broccolis
  • Salt + pepper

Preparation:

In a pot, cook the broccoli florets and peas in salted water until the peas are almost tender. Meanwhile, sauté the washed and chopped leeks in butter in a separate pan. Preheat the oven to 170°C. While the vegetables cook, cube the cheeses. Prepare a baking dish with a removable bottom, line it with parchment paper, and fit the dough into the bottom, pressing it up along the sides. Prick the dough with a fork, then place it in the oven for about 5-7 minutes, or until it’s slightly golden.

After 5-7 minutes, remove the baking tray from the oven (don’t turn it off) and set it aside. Once the vegetables are cooked, drain the peas and broccoli thoroughly and transfer them to a bowl. Add the sautéed leeks, sour cream, eggs, cheese, salt, and pepper, then mix everything together.

Pour the mixture over the partially baked dough.

Bake for about 45 minutes, or until the tart is golden brown and the filling is set with no visible liquid.
