Whenever I want to prepare a quick lunch or dinner, pasta is my salvation.
Always delicious, easy to prepare, very versatile and with infinite possibilities of combinations, pasta seems to me the perfect food in terms of balance regarding the work invested, time and result. ☺️
Ingredients: (for 6 servings)
- 300 g pasta
- 5 cloves of garlic
- mix dried herbs from: a teaspoon of oregano, a teaspoon of rosemary and a teaspoon of thyme
- fresh parsley
- 500 g minced meat (I had a mix of beef and pork)
- 2 large onions
- 600 ml tomato sauce
- 2 cans of tomatoes in their own juice
- olive oil (about 15 ml)
- 50 g walnuts
- 15 cherry tomatoes
- salt and pepper

Preparation:
Peel the onion and chop it finely. Peel the garlic and cut it into slices. Wash the tomatoes and cut them in half. Roughly chop the walnuts.
Boil the pasta according to the instructions.
In a large frying pan, add the olive oil, and when it is hot, add the onion and cook until soft. Then, add the meat and cook until the meat browns.

Add the tomato sauce and canned tomatoes and stir. Add the spices, pepper and garlic and stir well. Let it cook on low heat for about 15-20 minutes or until the sauce has reduced.

When the sauce has reduced, add the cooked and drained pasta, tomatoes, and walnuts. Mix well and cook for about a minute.

When it’s ready, turn off the heat, sprinkle with the chopped fresh parsley, and serve. Season with salt and pepper if needed.
