

The ideal side dish for fish or steak, or simply a light and flavorful lunch or dinner, served as is – these carrots are easy to prepare, low-carb and low-effort 😀.
Ingredients: (for 5 servings)
- 1 kg of carrots
- 1 small lemon
- 60 g of butter, diced
- 2-3 teaspoons of honey
- 50 g of walnuts
- 150 g of Greek yogurt
- 150 g of feta
- 50 ml of olive oil
- fresh parsley
- salt and pepper

Preparation:
Peel the carrots and cut them into 4 pieces, lengthwise. Wash the lemon and cut it into thin slices.

In a tray, place the lemon slices and add the sliced carrots, taking care not to overlap them. Add the pieces of butter, salt and pepper and sprinkle with half of the oil.
Bake for 40 minutes at 190 degrees.
Halfway through, remove the tray, turn the carrots on the other side and sprinkle the honey over them.
Return to the oven and remove when the time is up.

While the carrots are baking, chop the walnuts and parsley and prepare the feta sauce.

Place the yogurt, feta, remaining olive oil, and pepper in a blender and blend until smooth.
When the carrots are ready, remove them from the oven. Place the feta sauce in a bowl and spread it evenly.

Using tongs, move all the carrots over the sauce.
Then, sprinkle the walnuts and chopped parsley over the carrots, and you’re done.
