Red lentil soup – Vegan

If I had to describe this soup in three words, it would be: delicious, easy, and cozy.

This recipe is 100% vegan, loaded with flavor, and comes together with minimal fuss (translation: perfect for lazy weeknights or when you just can’t deal with complicated cooking). Red lentils cook quickly and break down into a creamy texture, soaking up all the spices.

Whether you’re a full-time plant-based foodie or just soup-curious, this one’s a winner.

Serve it with crusty bread or a squeeze of lemon.

Ingredients: (for 4-5 servings)

  • 200 g red lentils
  • 2 large red onions
  • 3 medium tomatoes
  • 1 large carrot
  • 1 celery stalk
  • 1-2 bay leaves
  • a few sprigs of fresh thyme
  • 1 red bell pepper
  • 2 cloves of garlic
  • a piece of ginger
  • 2 vegetable stock cubes
  • fresh coriander for serving
  • salt + pepper
  • a few tablespoons of olive oil

Preparation:

Wash, clean, and chop the vegetables. Coarsely chop the onion, peel and slice the carrot lengthwise, then cut it into thin slices. Dice the tomatoes and pepper, slice the celery stalk, finely chop the ginger, and slice the garlic. Remove the thyme leaves from the stalks.

In a wok or large pot, heat the oil. Once hot, add the onion, followed by the pepper, carrots, celery, ginger, garlic, and bay leaf. Sauté over medium-high heat for 3-5 minutes, stirring occasionally. When the onion has softened, add the tomatoes and thyme, stir, and cook for an additional 2 minutes.

Meanwhile, rinse the lentils in 3-4 changes of water and drain them. Add the drained lentils to the vegetables and mix well. Then pour in 1.5 liters of water, add the soup base cubes, and let everything simmer over medium heat for about 15-20 minutes, or until the vegetables are tender. Turn off the heat and remove the bay leaf.

Pour the soup into a blender-safe bowl. Season with salt and pepper to taste, then blend until you reach your desired consistency.

Serve topped with freshly chopped coriander and, if you like, some crunchy croutons.
