Serbian Pilaf – Vegan

This Serbian Pilaf is a flavourful, vegan dish featuring tender rice cooked with aromatic spices, onions, and super tasty vegetables. Simple yet delicious, it’s a comforting and hearty meal that’s perfect for any occasion!

Ingredients: (for 4 servings)

  • 300 g round grain rice (don’t use basmati or another type of rice; classic round grain rice does the trick in this recipe)
  • 3 large carrots
  • 400 g tomatoes in their own juice (from a can)
  • 2-3 sweet peppers
  • 300 g mushrooms
  • 1 vegetable-flavoured bouillon cube (or your favourite flavour)
  • salt + pepper
  • a few sprigs of fresh parsley
  • a teaspoon of dried thyme
  • 35-40 ml olive or sunflower oil
  • 1 large onion or 2-3 medium onions

Wash the rice well and drain in a sieve.

Peel the carrots and grate them on the large grater.

Wash the mushrooms, cut them in half, and then into equal slices.

Chop the onion finely.

Cut the aubergines in half lengthwise and then into slices.

In a pot, heat the oil and when it is hot, add the onion. Saute until it becomes translucent. Then add the peppers and carrots, mix well, and cook together for about 2-3 minutes. Add the mushrooms and cook over medium heat for about 3-4 minutes, stirring periodically. Add the rice, canned tomatoes, and dried thyme to the pot, mix well, and cook for about 2 minutes.

Then add the stock cube and enough water to cover what you have in the pot. Mix well.

Bring it to a simmer over medium heat for about 20-25 minutes, adding more water if necessary, especially if it evaporates too much and the rice isn’t fully cooked. I had to add extra water myself. Be careful not to let it reduce too much and stick to the bottom of the pot. Stir occasionally.

Finally, when the rice is cooked, season with salt and pepper and add the washed and freshly chopped parsley.

    L-am fiert in cuptor acoperit pentru 25 de minute si a iesit perfect. Multumesc de reteta!
