

Frittata is a type of omelet from Italian cuisine, which can be made with various vegetables, cheese, or meat and is usually baked in a pan on the stove or in the oven. My version is baked in the oven, it is easy to prepare, full of flavors, and full of super good ingredients.
Speaking about ingredients, you can play with both the quantities and the ingredients included in the frittata, and you can put what you have in the fridge, what you like, or what you fancy. 🙂
Ingredients: (for 4 servings)
- 7 large eggs (or 8 medium)
- 150 g fresh broccoli
- 50 g butter
- 3-4 spring onions
- 100 ml milk
- 200 g asparagus
- a few finely chopped champignons (optional)
- salt + pepper

Preparation:
Wash the broccoli and cut the florets as small as possible. Finely chop the spring onion. Wash the asparagus and clean/cut the ends. Mix the eggs with the milk, and add the chopped mushrooms, salt, and pepper.

Boil the broccoli florets for 3-4 minutes in a pot with water and a little salt. Then drain well in a colander and leave a little aside. Heat the butter in a large pan, and when it is melted, add the asparagus sprinkled with a little salt and pepper and brown it for 2-3 minutes. Remove the asparagus from the pan and put it on a plate. In the same pan, in the remaining butter, brown for 2 minutes the broccoli that you previously boiled earlier, sprinkling a little salt and a little pepper over it.

Turn on the oven at 180 degrees Celsius and let it heat up. Prepare a tray and grease it with a little oil. With the help of a whisk, mix the eggs, milk, and chopped mushrooms. Add the browned broccoli and chopped green onion to the mixture and mix it all. Transfer everything to the tray and arrange the browned asparagus on top. Sprinkle with salt and pepper.

Put it in the preheated oven for about 20-25 minutes or until it is well-browned.
