Baked cod with broccoli and chickpeas

Fish and broccoli lovers, unite! 🙂 I have the perfect recipe for you. Delicious, healthy, easy to prepare, and without too much hassle.

Ingredients: (for 2 servings)

  • 400 g fresh (or frozen) cod
  • 400 g canned chickpeas
  • 400 g of fresh broccoli
  • juice from a small lemon
  • ~50 g fresh ginger
  • 40 g butter divided in 2
  • 2 large shallots (or yellow or white onions if you don’t have shallots)
  • a few sprigs of fresh parsley
  • 4 cloves of garlic
  • salt + pepper
  • olive oil
  • garlic sauce or garlic and yogurt sauce for serving

Preparation:

Rinse the chickpeas under cold running water. Drain well and set aside. Wash the broccoli and cut it into small florets. Peel the ginger and garlic and grate them on a small grater. Clean the shallots, cut them into 4 lengthwise, and then into equal slices.

Turn on the oven -> grill function.

In a tray, add the chickpeas and broccoli, sprinkle generously olive oil to the whole composition, add salt and pepper and 20 grams of butte,r and put in the oven for 25 minutes.

When half of the time has passed, remove the dish from the oven, mix the ingredients well, and put it back.

While the chickpeas and broccoli are in the oven, put the fish in a bowl, together with the chopped onion, olive oil, ginger and grated garlic, lemon juice, salt and pepper, and the rest of the butter, and mix everything well.

When 25 minutes have passed, remove the broccoli and the chickpeas from the oven, mix them a little more with a spatula, and transfer the fish over the mixture, together with the onion the rest of the ingredients, and the juice they left. Sprinkle a little more pepper and a little salt. Also, add a little bit of water.

Put it back in the oven for another 15 minutes. In the meantime, you can prepare a simple garlic sauce or a yogurt and garlic sauce plus a teaspoon of mustard.

When it’s ready, remove it from the oven, sprinkle it with freshly chopped parsley, let it cool for 2 minutes, and then serve with garlic sauce.
