Tart with berries and physalis

This delightful tart perfectly balances sweet and tangy flavors, bursting with the natural goodness of fresh berries and physalis. Packed with vitamins and vibrant colors, it’s both nutritious and delicious. Easy to prepare, it’s the perfect treat to enjoy alongside a cup of coffee or your favorite tea, making every bite a little moment of bliss.

Ingredients:

For the filling:

  • 700 g blackberries
  • 500 g blueberries
  • 200 g physalis
  • 10 tablespoons brown sugar
  • 4 heaping tablespoons corn starch (for baking)
  • 2 packets vanilla sugar

For the dough:

  • 200 g cold butter (from the fridge)
  • 75 g brown sugar
  • 1 teaspoon vanilla extract
  • 300 g all-purpose flour
  • 10 tablespoons cold water

For brushing:

  • 1 small egg

Preparation:

Make the dough following the instructions that are detailed in this recipe, then place it in the freezer for 40–45 minutes.

In a bowl, combine the washed and peeled fruits with the brown sugar, vanilla sugar, and cornstarch.

Mix everything well, cover the bowl with foil, and refrigerate. Once chilled, take the dough out of the freezer and knead it briefly. If it feels too crumbly, add a little more water. Divide the dough into two portions, making one slightly smaller than the other. Return the smaller portion to the fridge while you work with the larger one.

Preheat the oven to 180°C (350°F). On a lightly floured surface, roll out the larger dough portion evenly with a rolling pin. Then, transfer it to a prepared baking tray with a removable bottom.

Remove the fruits from the refrigerator and drain off any excess juice. This makes a wonderful syrup to mix with sparkling water, resulting in a refreshing drink for hot summer days, so don’t throw it away!. Pour the drained fruits evenly into the tart shell.

Take the remaining dough out of the fridge and roll it out. I chose to cut decorative shapes from the dough to top the tart, but if you prefer a simpler approach, you can cover the entire tart with the rolled dough and prick it lightly with a fork. Trim any excess dough from the edges. In a bowl, beat the egg and use a pastry brush to evenly glaze the surface of the tart.

Bake the tart for about an hour. Remove it from the oven and allow it to cool completely. If desired, sprinkle the top with powdered sugar before serving.
