Baked salmon with asparagus, tomatoes and butter

I cooked this salmon for a quick lunch, using only a few ingredients, and the result was a super tasty meal.

Ingredients: (for ~4 servings)

  • ~600 g salmon
  • ~300 g asparagus (I had frozen)
  • ~200 g cherry tomatoes
  • a lemon
  • 4-5 cloves of garlic
  • a few sprigs of fresh parsley
  • 40 ml of olive oil
  • 2-3 sprigs of fresh rosemary
  • 3 spring onions
  • 100 g of butter
  • salt + pepper

Preparation:

Wash the fish and use paper kitchen napkins to absorb the water surplus.

Peel the garlic and smash it through the garlic press. Chop the parsley.

Wash the tomatoes and cut them in half. Also, cut the lemon in half. Melt the butter in the microwave for ~1 minute. Mix it with the chopped parsley, crushed garlic, juice from half a lemon, plus salt and pepper.

Put the asparagus, 20 ml of oil, salt + pepper in a bowl and mix well. Do the same with the tomatoes, using the remaining 20 ml of oil, salt, and pepper.

Prepare a tray with baking paper and add the evenly divided asparagus to the sides of the tray. Put the rosemary sprigs in the middle and place the fish on top.

Using a pastry brush, brush both the asparagus and the fish with the butter that you prepared earlier.
Add a slice of lemon on top of each piece of fish, and use the remaining half of the lemon that you have. Add the tomatoes and sprinkle a little pepper on top of everything.

Put the tray in the preheated oven at 200 degrees for 25-30 minutes, depending on the oven.

Do not leave for more than 30 minutes because you might end up with a dry fish.

When it has browned nicely, remove the tray from the oven. Sprinkle finely chopped spring onions on top and serve.
