Potato wraps – Vegetarian

I don’t know about you, but when it comes to “what to eat?” I often find myself running out of time or ideas, and sometimes I acknowledge that I was actually too lazy and didn’t go shopping or didn’t make an effort to think about what we will eat in the following days. 😀

This is why I often improvise ad-hoc with what I have available. That’s also the case with these wraps. 😀

And most of the time, something delicious and easy to prepare is born. 💜

Ingredients: (for 6 servings)

  • 1 kg of yellow potatoes
  • 50 ml milk
  • 50 g butter
  • 1 egg
  • 4 spring onions
  • 4 cloves of garlic
  • 1  jalapeño pepper
  • fresh parsley
  • fresh dill
  • 6 tortilla wraps
  • salt + pepper
  • a little olive oil

Preparation:

Peel the potatoes, cut them into equal cubes and boil them in water with a little salt. Boil until it’s easy to stick a fork in them.

While the potatoes are boiling, cut the spring onions, chop the parsley & dill, cut the jalapeño pepper in half lengthwise, then into 4-5 strips and then the strips into small pieces. Peel the garlic and crush it through the garlic press.

When the potatoes are cooked, drain the water and add the egg, milk and butter while they are still hot. Mash everything with the help of a potato press and mix well. Add salt and pepper to taste.

When all the ingredients are mixed well and you have reached the desired consistency, add the greens and mix everything well with the help of a spatula.

Divide the filling into 6 equal parts. Take one tortilla wrap and put filling on half of it, fold it and press it gently until the composition is evenly distributed inside the wrap. Proceed like this with all the wraps and filling.

In a non-stick pan, add a few millilitres of oil and put a wrap in the pan when it has heated up. Cook it on each side until it is nicely browned.

I served them with garlic & yoghurt sauce (yoghurt, crushed garlic, salt, and pepper – mixed all together).

You can eat them plain or with your favourite sauce.
