

If you’re a fan of apple cakes, then this recipe is about to become your new favorite! It’s super easy to make, irresistibly delicious, and packed with the kind of flavor that screams “summer”. The combination of crispy apples and fragrant strawberries creates a cake that’s both sweet and tart – the perfect balance for those warm, sunny days.
Plus, if you’re feeling adventurous, you can swap the strawberries for raspberries and give it a fun twist! No matter how you make it, this cake will fill your kitchen with an irresistible aroma and your heart with pure joy. Grab a slice (or two) and enjoy a little taste of summer in every bite!
Ingredients: (for a 30 cm pan)
- 6-8 apples
- 3 eggs
- juice of half a lemon
- a sachet of baking powder (15g)
- 50 g brown sugar
- flaked almonds
- 40 g melted butter
- vanilla essence
- 2 teaspoons ground cinnamon
- 130 ml milk
- 150 g flour
- ~400 g strawberries
- 2 sachets vanilla sugar

Preparation:
Rinse, peel, and cut the apples in half. Use the grater’s slicing side to create thin slices. Place the slices in a large bowl and toss with a little lemon juice to prevent browning. Set aside.

In a separate bowl, whisk the eggs with a fork. Then, pour in the melted butter and mix well. Add the sugar, stirring until combined. Next, incorporate the flour and cinnamon, mixing thoroughly with a wooden spoon. Finally, pour in the milk and stir until the batter is smooth.

Pour the prepared batter over the apple slices and mix well. Line a cake or pastry pan with parchment paper. Arrange half of the apple slices in the pan, followed by a layer of hulled strawberries. Finish by adding the remaining apple slices on top.

Sprinkle the vanilla sugar and almond flakes over the top. Bake in a preheated oven at 190°C for 1 to 1 hour and 10 minutes, or until the top is golden brown and the cake is fully cooked through.

Garnish with fresh strawberries on top and dust with a light coating of powdered sugar.
Place it in the refrigerator and let it chill for at least 2 hours. Serve cold, and if you’re feeling indulgent, add a dollop of whipped cream or a scoop of ice cream on the side. 🙂
