Avocado ice cream with raisins and cocoa

Delicious and healthy, but most importantly, a clever way to get kids to enjoy avocado. 🙂 It’s also vegan, making it perfect for those following a plant-based diet or fasting. Low in calories yet full of flavor, this ice cream is definitely worth trying.

Ingredients:

  • 4 small to medium avocados
  • 330 ml coconut milk
  • 40 g cocoa powder
  • 150 ml maple syrup
  • 2 packets vanilla extract
  • 6 tablespoons honey
  • Raisins

Peel and chop the avocados into pieces. In a large food processor, combine the coconut milk, honey, avocado, vanilla extract, cocoa powder, and maple syrup. Blend on high speed for 4–5 minutes until smooth.

Once blended, you’ll have a smooth and fragrant cream.

Prepare the ice cream molds and fill each one about halfway with the cream.

If you don’t have ice cream molds, you can simply pour the mixture into a casserole dish instead.

Add raisins to the molds, then fill them to the top with the cream.

Gently tap the molds to help the mixture settle, eliminating air pockets and allowing you to fill them completely to the top.

Place them in the freezer for 6–8 hours, or leave them overnight.
