Banana and peanut butter muffins

Perfect for breakfast, snack time, or a little treat with your afternoon coffee. They’re easy to make, kid-friendly, and will fill your kitchen with the most irresistible smell. One bite and you’ll be hooked!

Ingredients: (for ~15 muffins)

  • 3 ripe bananas
  • 3 large eggs
  • 5 tablespoons flour
  • 5 tablespoons sugar
  • 150 g peanut butter
  • 80 g agave syrup (or maple syrup)
  • 75 g cocoa powder
  • vanilla essence
  • 3 sachets vanilla sugar (one for sprinkling on top and 2 for mixing)
  • 1 sachet baking powder (15 g)
  • flaked almonds and sesame seeds for sprinkling on top
  • 5 tablespoons coconut oil

Preparation:
In a mixing bowl, add the peeled bananas, baking powder, vanilla sugar (2 sachets), vanilla extract, sugar, flour, cocoa powder, eggs, peanut butter, agave syrup, and coconut oil. Mix everything together with an electric mixer for 3–4 minutes, until smooth and well combined.

Preheat the oven to 180°C (356°F). Fill the muffin tray with the batter, leaving about half a centimeter of space at the top of each cup. Sprinkle a little vanilla sugar, almond flakes, and sesame seeds over each muffin for a delicious finishing touch.

Bake the muffins for about 17 minutes. If they don’t pass the toothpick test at that point, leave them in for an extra 3 minutes, keeping a close eye on them to make sure they don’t burn. Once they’re done, transfer them to a wire rack to cool.
