Salad with mango and avocado – Vegan

This vibrant vegan salad is like summer in a bowl!

Juicy mango, creamy avocado, and a mix of crisp veggies come together in the most refreshing, feel-good combo. It’s light, colorful, and bursting with flavor – perfect for sunny lunches, picnics, or anytime you need a little tropical boost.

Ingredients: (serves 4)

  • 1 large mango
  • 1 red onion
  • 2 avocados
  • 1 handful of fresh coriander
  • 20 cherry tomatoes
  • 1 chili pepper
  • 1 lemon (grated zest + juice)
  • 2 garlic cloves
  • salt _ pepper
  • olive oil

Preparation:
Peel and dice the mango and avocado into bite-sized cubes. Wash the lemon thoroughly with a bit of dish soap, then grate the zest and squeeze the juice into a bowl. Finely chop the chili pepper – remove the seeds if you prefer less heat. Slice the garlic thinly and finely dice the onion. Wash and chop the fresh coriander. Cut the tomatoes into quarters.

Combine all the prepared ingredients in a bowl. Drizzle with a bit of olive oil and season with salt and pepper to taste. Gently toss everything together, and enjoy this fresh, zesty salad!
