

This cake is wonderfully aromatic, with a moist and incredibly soft texture that’s truly special. On top, I added orange curd with a hint of coconut. However, you can enjoy the cake plain, or dress it up with chocolate topping, ice cream, jam, or any other combination you like. But I guarantee, it’s delicious even on its own!
Ingredients:
- 6 ripe bananas
- 200 g sugar
- 150 g melted butter
- 2 packets of baking powder
- 1 teaspoon vanilla extract
- 4 eggs
- 400 g flour
- Mixed candied fruits or raisins (optional)
- lemon curd
- coconut flakes

Preparation:
Peel the bananas and break them into small pieces. Mash them thoroughly using your fingers or a fork. Next, add the eggs and mix well. Once combined, add the sugar, melted butter, vanilla extract, and baking powder. Mix again until the sugar is fully dissolved. Gradually add the flour and continue mixing until the batter is smooth and well blended. Finally, fold in the candied fruits or raisins using a spoon.

Preheat the oven to 180°C. Meanwhile, transfer the batter into a baking pan.

Once the oven is hot, place the pan inside and bake for about 50-55 minutes, or until a toothpick inserted in the center comes out clean.

We garnish it with orange curd and grated coconut. You can also enjoy it plain: it’s just as delicious that way.
