Chicken stew, with celery, sweet potato and green beans

Delicious chicken stew, easy to prepare and full of flavours, ideal to enjoy on cold autumn or winter days.

Ingredients: (For 6 servings)

  • ~ 500 g yellow potatoes
  • ~ 500 sweet potatoes
  • 1 large chicken breast
  • 1 large pepper
  • 2 large carrots
  • 5 stalks of celery
  • ~ 400 g green beans
  • 2 red onions
  • 400 g of tomatoes in their own juice (canned)
  • fresh parsley
  • mix spices from: a spoonful of hot paprika, a spoonful of sweet paprika, a spoonful of onion powder, a spoonful of garlic powder, a spoonful of nigella sativa seeds, a spoonful of ground nutmeg, salt + pepper
  • 30 ml of olive oil
  • 2 cubes of soup concentrate, vegetable flavor

Preparation:

Wash the vegetables and the meat and cut them as follows: clean the ends of the green beans and cut them in half, cut the chicken breast in half lengthwise and then cut it into equal slices, peel and cut the sweet potatoes into large cubes, peel and cut the yellow potatoes into quarters, cut the pepper into four long strips and then into equal slices, cut the celery stalks into two lengthwise and then into equal slices, cut the carrots into two lengthwise and then into equal slices and chop finely the onion.

Put the oil in a large pot. When it has heated up, add the onion, celery, pepper, and spices and mix well. Cook for about a minute. Then add the chicken breast and cook them together for about 3-4 minutes. Then add the yellow potatoes, sweet potatoes, green beans, carrots, canned tomatoes, salt + pepper, and the 2 cubes of soup concentrate. Add ~800 ml of water, mix well, put the lid on, and let it cook on medium heat, stirring periodically, for about 45-50 minutes, or until all the vegetables are cooked.

When it’s ready, turn off the heat, leave it for about 30 minutes with the lid on, then sprinkle freshly chopped parsley on top and serve. 🙂

It goes really well with pickles.
