


Shrimps with tomato sauce, spicy and intensely flavoured, served with rice.
A great treat for lunch or dinner.
Ingredients: (for 5 servings)
- 1 kg shelled shrimps
- 800 g canned diced tomatoes
- 3 stalks of celery
- 2 large carrots
- fresh parsley
- 4 cloves of garlic
- 1 yellow onion
- 1 bell pepper
- a spoonful of dried oregano
- a spoonful of dried basil (I had fresh basil)
- 4 tablespoons of agave syrup
- 40 ml of olive oil
- spices mix from: a spoon of smoked paprika (or normal), a teaspoon of ground pepper, a teaspoon of cayenne pepper powder, a teaspoon of garlic powder, a teaspoon of salt and a teaspoon of ground thyme
- a cup of rice

Preparation:
Peel and cut all the vegetables into small cubes, or as small as you can.

Wash the shrimps, clean them well and put them in a bowl together with the mixture of spices you prepared earlier. Mix well and set aside.
In a separate pot, boil the rice according to the instructions.

In a large pot, add the oil and when it has heated up, add the vegetables. Cook them for about 5 minutes, stirring periodically.

Add the tomato sauce, oregano, basil and agave syrup, mix well and cook for around 20 minutes on medium heat, stirring periodically.
When the vegetables are cooked, add the shrimps, mix well and cook together for another 3-4 minutes.

When it’s done, add the fresh parsley on top and mix well.
Serve with boiled rice.
