Cabbage stew with minced beef

If you love cabbage, this recipe will definitely be to your taste.

It is easy and quick to prepare, using simple ingredients, but the result is delicious.

Ingredients: (for 8 servings)

  • 500 g minced beef
  • fresh parsley
  • 2 yellow onions
  • 4 stalks of celery
  • 500 ml beef/chicken/vegetable stock (if you don’t have stock, use 3-4 cubes of soup concentrate and 800 ml water)
  • 700 g canned diced tomatoes
  • 60 g rice
  • 50 ml olive oil
  • 3 large carrots
  • a few bay leaves
  • 2 tablespoons of Italian herbs mix
  • 1 small cabbage
  • 5 cloves of garlic
  • 200 ml water

Preparation:

Peel the carrots and cut them in half lengthwise, then cut them into equal slices. Cut the celery in half lengthwise, and then cut it into equal slices. Chop the cabbage coarsely. Cut the onion in half, then the halves into 4 slices, and chop it finely. Chop the parsley. Peel the garlic and crush it with the help of the garlic press.

In a large pot, add the oil and when it is hot, add the minced meat. Simmer for a few minutes until cooked. Then add the celery, carrots, onion, garlic, Italian herbs and carrots. Cook for about 10 minutes, stirring periodically.

Add the cabbage, water, stock, rice and tomatoes, mix well, and put the lid on. Cook it on medium heat, stirring periodically, until the cabbage and the rest of the vegetables are cooked.

Turn off the heat, add the chopped parsley, mix it well and leave for another 5 minutes, then serve.
