
Baked fennel is a dish full of flavors and textures.
Easy and quick to prepare.
Ingredients: (for 2 servings)
- 2 fennel roots
- 30 ml of olive oil
- a few sprigs of fresh parsley
- a few pieces of soft goat cheese
- Spice mix: a spoonful of sweet paprika, a spoonful of garlic powder, a spoonful of dried oregano, and a spoonful of ground cumin (not to be confused with caraway).
- Salt + pepper
- a teaspoon of chili flakes

Preparation:
Wash the fennel and remove the leaves – put them aside on a plate. Cut the fennel in half and then cut it into equal slices, about 1 cm thick.

Turn on the oven to 210-215 degrees Celsius and let it heat up.
Put the fennel slices in a bowl, together with the oil and spices and mix well.

In a tray with baking paper, place the seasoned fennel slices in an orderly manner and on top or in between, add the slices of cheese. Sprinkle the chilli flakes on top, salt and pepper and put in the preheated oven for 18-20 minutes or until the fennel and cheese have browned and the fennel is soft when you stick a fork in it.

When it’s done, remove it from the oven and sprinkle fresh fennel leaves and freshly chopped parsley on top.
Serve it simple, or if you want, you can make a quick sauce from yoghurt, a few crushed garlic cloves, salt, pepper and some freshly squeezed lemon juice 😀.
