Guacamole – Vegan

Guacamole is my go-to food when I have no inspiration. 🙂

What’s yours?

This is my interpretation of the guacamole recipe. Of course, there are a lot of variations, with different quantities or different secondary ingredients, but they all have as a base: avocado, lime juice (or lemon), tomatoes, onions and cilantro.

This dish is easy to make, has only a few ingredients, is vegan, quick to prepare and ultra delicious.

Ingredients: (for 5 servings)

  • 5 well-ripened avocados
  • ~20 cherry tomatoes
  • 3-4 cloves of garlic
  • 2-3 spring onions
  • fresh coriander
  • 1 medium onion
  • 1 jalapeno pepper (or any hot pepper you like/have)
  • salt + pepper
  • some paprika
  • 1 lime

Preparation:

Peel and pit the avocado and cut it into cubes. Peel the onion and cut it into cubes. Cut the tomatoes in half. Peel the garlic and cut it into pieces. Peel the chili pepper and cut it into slices. Finely chop the green onion.

Squeeze the lime juice. Coarsely chop the coriander.

Put in a blender: the cleaned avocado, tomatoes, hot pepper, onion, garlic, coriander, lime juice, salt, pepper and a pinch of paprika powder. Mix everything through the blender until you get the desired consistency. Add more salt and pepper if necessary.

Some people like it creamier, while others like it with more texture. I like it somehow in between.

Serve with green onions sprinkled on top.

I like to eat it on wraps, but it goes just as well on bread, toast, with carrots, celery sticks, pieces of bell pepper, etc.
