Muffins with cocoa and coffee cream

These are delicious muffins with an intense coffee flavour and a small quantity of sugar. Easy to prepare, these are wonderful on their own or with tea, coffee, hot chocolate, etc.

What more could you want?

Ingredients: (for ~ 16 pieces)

For the dough:

  • 7 eggs
  • 8 tablespoons of brown sugar
  • 200 g flour
  • 6 tablespoons cocoa powder
  • 80 g melted butter
  • 15 g baking powder
  • vanilla essence

For the cream:

  • 500 g mascarpone
  • 7 heaped teaspoons instant coffee
  • 4 tablespoons powdered sugar
  • grated dark chocolate, for sprinkling on top

Preparation:

Melt the butter for 30 seconds in the microwave. In a bowl, add the eggs and mix them at medium-high speed until you obtain a dense and strong foam. Then, gradually add the sugar until it is completely incorporated. Add the melted butter and mix well. Gradually add the cocoa, spoon by spoon, while mixing constantly.

After incorporating the cocoa, add the vanilla essence and mix well. Add the baking powder and flour gradually and mix continually.

Turn on the oven to 180 degrees and let it heat up.

Divide the mixture into the muffin baking forms. After you have finished dividing the mixture into the tins and the oven is heated, put the muffins in the oven for 15-20 minutes or until they pass the toothpick test.

In the meantime, prepare the cream. Mix the mascarpone, powdered sugar, and instant coffee in a bowl.

Transfer the cream thus obtained to a pipping bag and refrigerate until the muffins are ready.

When the muffins are baked, turn off the oven, take them out, and let them cool.

When they are completely cooled, decorate them with the cream.

Sprinkle the grated chocolate on top. Keep in the refrigerator until serving.
