Tart with leeks, dried tomatoes, cheese and mint – Vegetarian

Delicious tart, with accents of flavor given by dried tomatoes and fresh mint. A delight of tastes.

Easy and quick to prepare.

Ingredients: (for a 28 cm tray, ~ 8 servings)

  • 1 puff pastry (or pastry for tarts / or pizza dough)
  • 9-10 leeks
  • 4 eggs
  • 200 g grated cheese (I had gouda, but you can use any “melting” cheese or cottage cheese)
  • 100 g sun-dried tomatoes, in oil
  • a red bell pepper
  • 130 g yogurt
  • 100 ml milk
  • 50 g butter
  • a few fresh mint leaves
  • salt + pepper

Preparation:

Wash the leek well and cut into equal slices.

Drain the sun-dried tomatoes well from the oil and cut into coarse pieces.

Cut the pepper into strips. Finely chop the mint leaves. Grate the cheese.

In a large wok, add the butter, and when it has melted, add the leek and sauté for 2-3 minutes, stirring occasionally. Add the bell pepper and cook together until both the leek and pepper begin to soften.

When they have softened, turn off the heat and set the wok aside.

Prepare a baking tray with baking paper and place the dough in it. Prick it with a fork. Turn on the oven to 180 degrees and let it heat up.

Transfer the cooked leeks to a bowl and add the rest of the ingredients, add pepper and a little salt and mix well. Transfer the mixture to the tray and level it well.

Bake in the preheated oven for 40-50 minutes or until the surface of the tart is nicely browned.

Serve warm; it’s delicious. You can also serve it with yogurt and garlic dressing.
