
A nutritious and delicious dish that is super easy to make.
Stamppot is a traditional Dutch dish made from potatoes and various combinations and additions of vegetables (sometimes fruits), mashed into a more rustic/thick consistency. It can be successfully accompanied by a steak, a grilled sausage (this being the most common serving option in the Netherlands), fried eggs, or it can be eaten plain.
Ingredients: (for 4 servings)
- one large white onion
- one large sweet potato
- one yellow onion
- 3 red onions
- 150 g green beans
- one red bell pepper
- 6-7 medium white potatoes
- 1 heaped tablespoon brown sugar
- 20 g butter for caramelizing the onions (for the vegan version, use olive oil)
- Mix of spices made from: one teaspoon garlic powder, one teaspoon onion powder, half a teaspoon ground ginger, a little salt, one teaspoon sweet paprika, one teaspoon turmeric, half a teaspoon ground cumin, one teaspoon dried coriander, one teaspoon chili, and a little pepper
- 50 g butter for mixing at the end (for the vegan version, skip the butter)

Preparation:
Peel and cut the vegetables as follows: red onion in half lengthwise and then slice. Bell pepper, in equal slices. Potatoes in cubes. White and yellow onions in coarse pieces. Peel the ends of the green beans and cut them in half.

In a pot, put the white and yellow onions and the potatoes, add 1 L of water, cover with a lid, and cook for 15 minutes, stirring occasionally. When the 15 minutes are gone, add the green beans and cook for about 10 more minutes.

In a large wok, put 20 g of butter and add the red onion and pepper. Cook until the vegetables are well softened, stirring periodically. Add the sugar and cook for a few more minutes. When they are ready, turn off the heat and transfer the mixture to a bowl. Set aside.

When the vegetables are cooked, strain them and drain the water. Add 50 g of butter and the spice mixture and mash them superficially using a vegetable masher.

Serve with steak, sausages, eggs, or plain.
Place the resulting puree on a plate and add a few tablespoons of caramelized onions and peppers.
You can also serve it with pickles if you like the combination.
