


Perfect for lunch at work, to be enjoyed with a hot meal, or just with some butter on them, these breads are delicious and quick to make. They stay fresh for a few days without problems (you can keep them in the fridge). Heat them for 30 seconds in the microwave before eating them – they become warm and good, perfect for a happy tummy.
Ingredients: (for 12 small breads)
For the dough:
- 380 g yogurt
- 380 g flour
- 15 g baking powder
- a teaspoon of salt
For the filling:
- a bunch of finely chopped dill
- a large leek (or 2 small ones) cut in half lengthwise and then cut into thin, equal slices
- 300 g grated cheese (I had gouda, but you can use any cheese that melts nicely)
- a teaspoon of ground pepper
- some olive oil for frying

Preparation:
Start by preparing the dough. In a large bowl, combine all the ingredients for the dough and mix them first with a spoon and then with your hands until you have obtained a compact, fluffy dough that does not stick to your hands. On a work surface well sprinkled with flour, knead the dough into a ball, which then you divide into two equal parts.

Shape each half of the dough into a ball. Cut each of the balls into 6 equal parts. Shape the dough pieces into small balls.

Divide the filling into 12 equal portions. Sprinkle the surface well with flour and, using a rolling pin, roll out the dough into a thin sheet approximately 16-18 cm in diameter. Place a portion of the filling and fold the edges of the dough towards the centre, doing so until the bread is “closed”.

Proceed in this way until you have used up all the dough and filling, the result being 12 lovely loaves, about 8-10 cm in diameter each.
In a large frying pan, over medium heat, add a little olive oil. When it has heated, add 6 breads (first with the folded side on the pan), put the lid on and cook for 5 minutes.

After 5 minutes, drizzle a little oil over the breads and turn them over to brown on the other side. Make sure to put the lid on.

Do the same with the rest of the breads.
They are wonderfully delicious, hot or cold, plain or near a meal. Perfect for office days or when you are on the go.
