Pan-fried bean bites- Vegetarian

These delicious vegetarian bean bites are the perfect quick-fix for lunch or dinner. Crispy on the outside and full of flavor on the inside, they come together in no time with minimal effort.

Packed with plant-based goodness, they’re not only healthy but also incredibly versatile. Whether served with a fresh salad, in a wrap, or on their own with your favorite dip, these bites are sure to become a go-to favorite.

Ingredients:

  • 3 cans (400g each) of beans (final drained weight ~750–800g) – I had red beans
  • 1 can of diced tomatoes (~400g)
  • 1 jar of vegetarian ready-made Bolognese pasta sauce (~350g)
  • 3 eggs
  • 2 tablespoons of classic mustard
  • 1 teaspoon of cumin
  • 1 teaspoon of smoked paprika (or regular paprika if you don’t have smoked)
  • Salt + pepper
  • A few sprigs of fresh parsley
  • 1 large cup of breadcrumbs
  • 1 onion
  • A little olive oil for frying

Preparation:

Thoroughly drain the beans and transfer them to a pot. Use a masher or similar tool to mash the beans until they are finely broken down.

Peel and finely chop the onion. Wash and finely chop the parsley as well.
Add the eggs, chopped onion, mustard, salt, pepper, cumin, paprika, diced tomatoes, pasta sauce, chopped parsley, and breadcrumbs to the mashed beans. Mix everything thoroughly until well combined.
If the mixture feels too soft, add a few extra tablespoons of breadcrumbs to reach the desired consistency.

Let the mixture rest for about 30 minutes. In the meantime, prepare a non-stick frying pan and add a little olive oil. Using your hands, shape the mixture into small patties or bites, then place them in the pan. Fry each side for 1–2 minutes, depending on how hot the pan is, until golden and slightly crispy. Carefully flip them using a spatula. For each new batch, add a small amount of oil to the pan, just enough to prevent sticking. There’s no need to use too much oil.

These bites are incredibly tasty and easy to prepare. You can enjoy them on their own, as a side dish with a barbecue or steak, or paired with a fresh salad. However you choose to serve them, you’re sure to love them!
