Pancakes with semolina

Ingredients: (for about 12 pieces)

  • 500 g fresh cottage cheese
  • 4 eggs
  • 7-8 tablespoons semolina
  • 1 sachet baking powder (15 g)
  • 2 sachets vanilla sugar
  • a little vanilla essence
  • coconut oil for frying

Preparation:
In a mixing bowl, combine the cheese, eggs, semolina, vanilla essence, vanilla sugar, and baking powder. If the batter feels too soft, simply add 1–2 extra tablespoons of semolina to adjust the consistency. Allow the mixture to rest for about 20 minutes—this helps the semolina absorb the moisture and thicken slightly.

Heat 2 tablespoons of coconut oil in a non-stick pan over medium heat. Once the oil is hot, spoon in the batter—about one tablespoon per pancake. The mixture may spread slightly at first; use a spatula to gently shape and bring the edges in, helping the pancakes hold their form. Let them cook until nicely golden on the bottom before flipping.

Once the surface of the pancakes turns matte and starts to set, gently flip them using two spatulas—one underneath and one on top for support (see photo below). Cook until the second side is beautifully golden as well. When done, transfer the pancakes onto a plate lined with paper towels to absorb any excess oil.

Continue this process until all the batter is used, placing paper towels between each layer of pancakes to keep them from becoming greasy. For each new batch, add another tablespoon or two of oil to the pan to maintain the right amount—this helps prevent burning and ensures even browning.
