Ricotta, mandarin, and almond muffins

These delicate and fluffy ricotta muffins are bursting with the bright, citrusy flavor of mandarin zest and the subtle crunch of almond flakes. Made with creamy ricotta cheese, fragrant almond and orange essences, and a hint of natural sweetness, they offer a moist and tender crumb that’s perfect for breakfast or a light snack. Easy to prepare and beautifully aromatic, these muffins combine wholesome ingredients with a gourmet touch, making them an irresistible treat for any time of day.

Ingredients: (for 24 pieces)

  • 400g flour
  • 500g ricotta (you can also use Romanian urda if you prefer)
  • 4 eggs
  • 250g sugar
  • 100g almond flakes
  • 100ml milk
  • 3 packets of baking powder
  • 150ml oil
  • Zest of one mandarin (or orange)
  • 1 almond extract
  • 1 orange extract

Preparation:
Whisk the eggs with sugar for a few minutes until the mixture becomes fluffy and the sugar is fully dissolved. Add the well-drained cheese and mix again for about a minute. Then, add the extracts, mandarin zest, oil, and milk, mixing once more for 1-2 minutes. Gradually add the flour and baking powder, mixing until everything is well combined. Finally, fold in ¾ of the almond flakes using a spoon.

Line a muffin tin with paper liners and evenly spoon the batter into each cup. Sprinkle the remaining almond flakes on top of each muffin before baking.

Bake in a preheated oven at 180°C (350°F) for about 20-25 minutes, or until the muffins are beautifully golden brown.
