

This potato salad has always been one of my favorite childhood dishes. So whenever I feel nostalgic or crave the flavors of the past, or even when I just don’t have time for something more elaborate, I turn to this potato salad.
It’s made with simple, everyday ingredients I usually already have at home, and it comes together quickly with minimal effort.
Ingredients: (for 4 portions)
- 5 large potatoes
- 4–5 eggs
- 3–4 small onions
- Vinegar + oil
- Salt + pepper
- Mustard
- Olives

Preparation:
Wash the potatoes thoroughly and boil them with the skin on, in the same pot, along with the eggs.

While the potatoes are boiling, remove the pits from the olives, peel the onions, and slice them.
The potatoes should be boiled for about 40 minutes, or until a knife slides in easily.

Once they’re done boiling, remove the pot from the heat and place it in the sink. Run cold water over the potatoes until they’ve cooled down enough to handle. Then, peel off the skins and cut the potatoes into cubes.

Pentru aceasta cantitate, eu am facut un dressing din: 10 linguri ulei de masline, 5-6 linguri de otet (in functie de cat e de tare si cat de mult va place otetul in salata voastra de cartofi) o lingurita zahar si 2 lingurite mari de mustar. Se amesteca totul bine.

Pour the dressing over the other ingredients, which you’ve already mixed together in a bowl, and stir well to evenly coat everything with the dressing.

Season with salt and pepper to taste, add more vinegar if needed, and serve.:)
