Spinach with milk and garlic – Vegetarian

Let’s be real: spinach doesn’t always get the love it deserves.

But this recipe? It’s about to change everything you thought you knew about leafy greens. Creamy, garlicky, and comforting in all the right ways, this spinach with milk and garlic is a simple vegetarian dish that’s big on flavor and low on effort.

It’s the kind of meal that feels nostalgic, like something your grandma used to make: only now you realize just how genius she was. Bonus tip: top it with one or two fried eggs and suddenly you’ve got yourself a super satisfying, no-fuss lunch or dinner.

Delicious, easy, and kind of addictive. Who knew spinach could be this exciting? 😄

Ingredients: (For ~5 servings)

  • 900 g fresh spinach
  • 600 ml milk
  • 60 g butter
  • 5 tablespoons olive oil
  • 5-6 cloves garlic
  • 5 heaped tablespoons flour
  • 5 tablespoons full of yogurt (or sour cream)
  • salt + pepper

Fill a large pot with water and add a teaspoon of salt. Place it on the stove and bring it to a boil. Meanwhile, wash the spinach thoroughly and peel and crush the garlic.

Once the water starts boiling, add the spinach in batches (I usually do it in two). Blanch each batch for about 3 minutes, then remove it with a slotted spoon and transfer it to a bowl. Repeat until all the spinach is blanched.

Next, take a handful of the cooked spinach and chop it finely. Continue until you’ve chopped all of it.

In a pan, heat the butter and olive oil together, then add the crushed garlic. Sauté for about a minute, just until fragrant. Add the flour and stir well until fully incorporated.

Gradually pour in the milk, stirring constantly to avoid lumps, until all the milk is incorporated. Add the chopped spinach, stir to combine, then season with salt and pepper. Let it simmer over low heat for about 5–6 minutes.

Finally, stir in the yogurt, mix well, and let it cook for another minute. Adjust seasoning if needed, then turn off the heat.

It’s absolutely delicious served with fried eggs, but it also works great as a side dish for steak. Pair it with some pickles for extra flavor, or enjoy it on its own—either way, it’s a winner! 😊
